PRotein Mac & Cheese

This ones for the macaroni & cheese lovers, except its high protein, gluten free & the most adult version you can get while still filling your hearts soft spot for this delicious comfort meal.

What you'll need:
Gluten Free Pasta or Chickpea pasta (even more protein)
1/2 cup heaping of GoodCulture whole milk cottage cheese
8oz of cheddar cheese (not pre shredded)
1/2 cup heaping plain greek yogurt
1/4 cup milk or heavy cream
1/2 T Dijion mustard
1 T Butter
Salt/pepper/garlic powder/onion powder
Dash of turmeric
Dash of paprika
1/4 cup of chicken stock

How you’ll make it:
Boil noodles as box directed
Shred 8oz of cheese
In a blender add cottage cheese, greek yogurt, seasonings, dijon mustard & milk. 
Blend set aside, that’s the protein sauce.
In a sauce pan on medium, melt butter & once melted add protein blended sauce to the pan. Add chicken stock to the pan and whisk through until heated, add shredded cheese slowly and  keep mixing until melted and heated all the way. 
Add more seasoning to the cheese sauce if needed.
Drain noodles and pour onto the cheese mixture, mix together, ENJOY!
