LEmon, Feta Potato wedges

Just a simple NON-boring side dish for any meal, BBQ or meal prep.

What you’ll need:
2 Russet potatos
1/4 Cup Feta cheese
1 red bell pepper
1 Lemon
Fresh Dill
Salt/Pepper/Onion powder/Garlic powder
Olive oil

How you’ll make it:
Wash & cut potato into equal sized wedges
Chop finely red bell pepper
Toss potato & peppers together on a sheet pan or airfryer with olive oil, fresh dill & seasonings.
Cut the lemon into 4s, place 2 on the sheet with the potato & peppers, set aside other half.
Roast or air fry for 20-25 min on 350 degrees until soft to poke & crispy on the outside.
Remove from heat, remove the lemon slices that were baked, top with a fresh drizzle of olive oil, squeeze fresh lemon & top with feta cheese while warm. Serve warm.
