greek chicken meatballs

I love to prep quick and easy sources of protein for each week that don’t get boring. Meatballs are just such an easy, quality protein source that can be reheated & made with just about any style possible. One of my favorites are these greek inspired meatballs that are packed with delicious feta & sun-dried tomato. These can go well with a pasta dish, salad or paired with roasted veggies. I typically just eat these as is with a super lemony dill sauce. Enjoy!

Here’s what you’ll need:

1 lb Ground chicken

1 jar Sun-dried tomato in olive oil

1/4 Red Onion

5oz Feta Cheese

Salt/Pepper/Garlic Powder/Onion Powder

Here’s how you’ll make it:

Start with a large mixing bowl & add in all the ingredients from above. I chop my red onion super tiny, roughly chop my sundered tomato (I like them larger) cut how you like & add in a 5oz container of feta. I then add a little bit of olive oil from the sun-dried tomato jar, & all the seasonings above.

I place these in the oven at 350 for about 20 min (depending on how large you made those balls)…

For the sauce I did:

Plain Greek yogurt, 1 whole lemon, fresh dill, salt, pepper, garlic.
