Chicken Chop salad

Perfect for an easy lunch, prepped once eaten twice.

What you’ll need:
Rotisserie chicken
Red onion
Cucumber
Chickpeas
Bell pepper
Olive oil
Lemon
Salt 
Pepper
Balsamic Vinegar

How you’ll make it:
Start by shredded all the chicken off the bone if you’re using a rotisserie chicken and add into a large mixing bowl. We are going to chop all of our veggies into small pieces, red onion, cucumber, red pepper then add into the bowl, the smaller the better. Add a can of drained chickpeas and the juice of 1 lemon into the bowl. Now for the dressing, add salt, pepper, drizzle of olive oil and then balsamic vinegar. Toss together best served cold and good in the fridge for weekly meal prep.
