Quinoa Salad
The BEST summer salad topper, protein boost or side dish!
Here’s what you’ll need:
1 cup quinoa
1/2 red onion
1 cup Cherry tomatos
1 can chickpeas
1 cup feta cheese
2 T Olive oil
1 lemon juiced
Salt/pep/garlic powder/onion powder
1T Honey

Here’s how to make it:
Cook quinoa as directed & start chopping red onion finely, cherry tomato in half & making the dressing.
Whisk together olive oil, lemon juice, honey & seasonings.
Once quinoa is cooked & cooled mix all the veggies in a bowl & toss in the dressing.
